Novo Fogo, Morretes, Paraná — in the Atlantic Rainforest of southern Brazil.

Cachaça is the most consumed spirit in Brazil and one of the least understood everywhere else, usually filed under rum by people who have never had a good one. It's made from fresh pressed cane, not molasses, which puts it closer to rhum agricole than to anything in the Caribbean rum aisle.

Novo Fogo holds USDA organic certification covering both the estate-grown cane and the distillery itself. The property sits in the Atlantic Forest of Paraná, one of the most biodiverse and most depleted biomes in South America, and the distillery has tied its operations to reforestation on the surrounding land.

Axinte is blunt that his own category has been part of the damage: barrels cut from native hardwoods, land cleared for cane. His objection is not that producers lie but that nothing exists to check them against.

The barrel-aged expression took Double Gold at the New York International Spirits Competition. Brazilian oak species used for ageing give it a character no imported cask can reproduce, which is worth seeking out on its own terms rather than as a curiosity.

For thirty-five dollars this is one of the cheapest ways to taste what certified organic cane farming produces in a glass.

Axinte’s objection is not that producers lie but that nothing exists to check them against. Sustainability claims, he has argued, are difficult to verify because there is no accreditation process — especially for spirits made far away — so a shopper ends up relying on the producer’s character instead of evidence. He called that a very poor situation. It is also, precisely, the gap this platform was built to close.

As the replanted forest has grown back around the distillery, eighty-eight bird species have been recorded living in it. They eat the insects that would otherwise reach the cane. The reforestation is not decoration next to the farming — it is why no insecticide is needed.

Capturing vapour to preheat the stills saves about twenty percent of the energy needed to run them, and cost, in his words, only a pipe. His point is that the solutions mostly already exist and are often free or cheap; what is missing is the will to fit them.
